Easy Lemon Meringue Pie Recipe

Ingredients:
- 4 eggs, separated
- 3 tablespoons butter
- 2 teaspoons lemon zest
- 1 1/2 cups water
- 1 1/2 cups white sugar
- 1 (9 inch) pie crust, (pre-made)
- 1/2 teaspoon salt
- 1/2 cup cornstarch
- 1/2 cup lemon juice
- 1/2 cup white sugar
- 1/3 cup water
- 1/4 teaspoon salt
Instructions:
Begin by preheating your oven to 325 degrees. In a heavy saucepan, combine 1 ½ cup sugar, salt, and 1 ½ cups water. Place on high heat, and bring mixture to a boil. In a small bowl, mix cornstarch and 1/3 cup water into a smooth paste. Whisk paste gradually into boiling sugar mixture, boiling until it is thick and clear. Stir constantly, and remove from heat. In a small bowl, whisk your 4 egg yolks and lemon juice. Gradually whisk in the egg yolk and lemon juice mixture into the sugar mixture. At this point you should return the sugar mixture to the stove, and bring it to a boil (stirring constantly). Remove mixture from heat. Stir in 2 tsp. lemon zest and 3 tbsp. butter. Place mixture in the fridge until it reaches lukewarm temperature. In a large glass, combine egg whites and salt. Whip until a foam is created. Add ½ cup of sugar, still whipping. Beat until the whites create “stiff” peaks. Stir ¾ cup of meringue into your lukewarm filling, spooning the filling into your 9 inch pie crust. Cover the filling/pie with the remaining meringue. Bake in preheated oven for fifteen (15) minutes, until meringue browns. Cool for 1 hour before serving.

Easy Meringue Cookie Recipe
This is a delicious spin on your regular meringue cookie recipe. This twist adds chocolate to the mix.
Prep Time: 15 minutes
Cook time: 25-30 minutes
Yield: 12 cookies
Ingredients:
- 3 egg whites
- 1 tablespoon unsweetened cocoa powder
- 2/3 cup white sugar
- 1/2 teaspoon vanilla extract
- 1/3 cup semisweet chocolate chips
- 1/8 teaspoon cream of tartar
Instructions:
Begin by preheating your oven to 300 degrees. Start making the meringue by combining your 3 egg whites, 1/8 cup cream of tartar, and ½ tsp. of vanilla. Beat mixture until egg whites form soft peaks. Gradually add 2/3 cup white sugar. Beat until stiff peaks are formed, and a glossy finish coats the mixture. Fold in 1 tbsp. cocoa powder and 1/3 cup of semisweet chocolate chips. Using a teaspoon, place dollops of mixture onto a greased cookie sheet. Bake 25 – 30 minutes. Voila! With very little effort you have created a delicious meringue cookie that friends and family will crave for years to come!

Yummy, Easy Meringue Recipe

Cook time: 3 hours
Yield: 12 cookies
Ingredients:
- 4 egg whites
- 2 ¼ cups of confectioner’s sugar
- Butter
- Flour
Instructions:
Start out by preheating your oven to 200 degrees. Use enough butter and flour to cover a cookie sheet sufficiently. Inside of a glass (or metal bowl, if you prefer), whip your 4 egg whites until they begin to take on a foamy appearance. Gradually sprinkle in 2 ¼ cups of sugar while whipping at a medium speed. Once the mixture becomes stiff and glossy, you can begin placing your meringue on the cookie sheet using a teaspoon (or a pastry bag, if you have one). Place meringue in the oven, allowing the door to stay propped open slightly, and bake for 3 hours.Allow cookies to cool, and then serve.
If you would like to mix things up a bit, you can add different flavoring to enhance this easy meringue recipe. Try adding lemon juice, chocolate, or any other flavor your heart desires.
